Italian Sausages and Peppers
This recipe was inspired by my fiancé’s friend’s grandmother. She’s a lovely Italian lady, and just the sweetest woman! She invited us over for dinner one night while my fiancé’s buddy was visiting (he lives several hours away), and it was one of the best sausage dishes I’ve ever had! So I decided to come up with one of my own, and it’s now one of our favorites!
This takes about ten minutes to prepare and an hour to cook.
- 1 Package of Mild Italian Sausages (or whatever kind you prefer)
- Peppers (I used 2 red, 2 yellow, 2 green)
- Beef broth (1 carton)
- Soy sauce (2 tbsp or to taste)
- Seasonings (I used seasoning salt, garlic powder, thyme, paprika, salt & pepper all to taste)
Preheat oven to 425°.
Put the sausages in a pot and fill with water until sausages are submerged. Add beef broth. Add seasonings. Bring to a boil for about 15-20 minutes or so (depending on size) or until they look kinda like this
While the sausages are boiling, chop up your peppers (I just cut them into large slices) and place them in a glass baking dish. Add seasonings and some beef broth and soy sauce-just enough to cover the bottom of the dish and soak the peppers..
When you’re sausages have browned (see photo above), remove them with a pair of tongs and place them in the dish with the peppers. Pour juices left in pot into glass dish, until the sausages are about halfway submerged.
Place in oven (at 425°) and let bake for about an hour (check on them about halfway and turn them) or until they look like this
Voila! I’d let them cool for a few minutes before serving, they can be pretty hot!
This dish is very versatile. We simply paired it with some rice, but you could them over rice, or with some noodles! We put them on some fresh, toasted buns with melted, gooey Havarti the next day for lunch and they were AMAZEBALLS.
